So far as of 6/18 the release of Oreo has been given to Verizon and Sprint. As for At&t not yet. According to AndroidPolice, At&t is going to get updated soon. It's been released for first responder packages but as of now we just wait.

At&t in the US is suppose to be rolling out yesterday or tomorrow.

Well it appears this wasn't true. My girl has a Samsung Galaxy S7 with At&t and still nothing. All my other devices with that're a Samsung Galaxy S7 are updated to Oreo. I looked up some more info to find it basically just a waiting game but it should be released. I did find some info though.

June 7, 2018 – Verizon US: Verizon pulled the Oreo update for some reason and covered it up as if it never happened. There’s no word if the carrier will reverse course and ship Oreo to the Galaxy S7 devices in the future or if the update is doomed.
June 8, 2018 – India: Galaxy S7 and S7 Edge units in India start getting Android 8.0 Oreo.
June 8, 2018 – AT&T US: A Redditor posted screenshots of their Samsung Galaxy S7 receiving an Oreo OTA.
June 9, 2018 – AT&T US: The carrier starts rolling out the Android 8.0 Oreo update to the Galaxy S7 and S7 Edge.
June 11, 2018 – Rogers/Fido Canada: Rogers and Fido have released the Oreo update for the Galaxy S7 duo.

Its suppose to be released by now so not sure whats happening.

To this day her phone hasn't gotten the update. I think I'm going to give up the search since phone replacement time is nearing.
